Ingredients:

1 kg Bongiovanni Sfoglia Flour

600 ml cold water

80 g sugar

20 g salt

20 g fresh yeast

300 g cold butter for lamination
Mix flour, sugar, salt, water, and yeast. Knead until smooth, then chill for 30 minutes. Add the butter block and give three folds (turns). Rest for 1 hour. Roll to 3 mm thickness, cut into strips, roll, and bake at 200°C for 20 minutes. The result: crisp, golden pastries with tender crumb and balanced sweetness.
