A short history of Pecorino
“Pecorino” comes from pecora, the Italian word for sheep. While many regional versions exist across Italy, Pecorino Romano is the most famous — with origins dating back to ancient Roman times. In fact, it was once a staple in the rations of Roman soldiers because of its high protein, long shelf life, and intense flavor.
To qualify as DOP (Denominazione di Origine Protetta), authentic Pecorino Romano must be produced in Sardinia, Lazio, or the province of Grosseto in Tuscany — following strict rules on ingredients, animal feed, and aging. The cheese is aged for at least 5 months, often longer, and develops a sharp, salty, almost spicy flavor as it matures.
